- 1 c. all purpose flour
- 1/2 c. shredded bran cereal (such as All-bran)
- 1/2 c. toasted wheat germ
- 1/2 c. old fashioned oats
- 1/2 c. cornmeal
- 1/2 c. sugar
- 1/2 c. chopped walnuts (about 2 oz.)
- 1/2 c. dark raisins
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1 c. buttermilk
- 1/3 c. melted butter
- 1 tart green apple (such as Granny Smith), peeled, cored, coursely chopped
- 1 lg. egg
Preheat oven to 400 degrees.
Place paper liners in standard muffin cups.
Combine flour, bran cereal, toasted wheat germ, oats, cornmeal, sugar, chopped walnuts, raisins, baking powder, baking soda, cinnamon, ginger, and nutmeg in large bowl.
Combine buttermilk, melted butter, chopped apple and egg in food processor.
Process mixture over dry ingredients.
Stir in just combined. Spoon 1/2 cup batter into each muffin cup.
Bake muffins until tester inserted into center comes out clean, about 25 minutes.
Transfer muffins to rack and cool slightly before serving. (Muffins can be prepared 1 day ahead. Store in airtight container at room temperature.)
