Ingredients

  • 1 1/2 c. brown sugar
  • 2 eggs
  • 1 c. oil
  • 2 tsp. vanilla
  • 1 c. buttermilk
  • 1 tsp. baking soda
  • 3 c. flour
  • 1 1/2 c. diced rhubarb
  • TOPPING: 1/2 c. brown sugar 1 tsp. cinnamon

Instructions

Mix all ingredients together well.

Fill muffin tins 3/4 full.

Sprinkle each with sugar topping.

Bake at 350 degrees for 15 to 20 minutes or until done.
