Simple roasted salmon gets a bright and creamy treatment from this simple avocado-based sauce. Serve it on a salad or over a bed of warm quinoa.
Ingredients
For the Salmon
- 1 pound of salmon, cut into 3-4 inch-thick pieces
- 1 tablespoon of olive oil
- Salt (to taste)
- Black pepper (to taste)
For the Sauce:
- 1/2 cup of olive oil
- 1 small avocado
- 1/4 cup of basil
- 3 tablespoons of parsley
- 2 tablespoons of lime juice
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Heat up your oven to 425°F.
- Mix all of the ingredients for the sauce in a food processor or blender.
- Lightly brush salmon with olive oil and season with salt and pepper.
- Place salmon, skin side down, on a sheet pan covered with parchment paper and bake for 12-15 minutes, depending on the size and thickness.
- Serve salmon with a drizzle of the avocado-lime sauce.
