Baked potato soup is always a crowd pleaser and this recipe is no exception. Loaded with cheese, bacon, sour cream and chives, this warming bowl of goodness will quickly join your regular home menu rotation. Enjoy!


  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 tablespoon unsalted butter
  • 4 cups half & half
  • 1 1/2 teaspoon Kosher salt
  • 1 1/2 teaspoon black pepper
  • 3-4 large baked russet potatoes (peeled and roughly chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup sour cream
  • 1/2 cup sliced chives(or sliced scallions)


Sweat the onions and celery with butter until soft. Add in the half & half, salt, pepper and baked potatoes. Simmer for 10 minutes. Puree the soup in the blender. This might need to be done in batches or you can use an immersion stick blender. Stir in the Cheddar cheese, bacon crumbles, sour cream and chives. Adjust seasonings if necessary and then enjoy!
